Directions:

  • Combine margarita mix, lime juice, and garlic in any mixing bowl. Add chicken and lightly massage over the marinade and cover. 
  • Refrigerate for 2-4 hours.
  • After refrigerating, drain the chicken and season it with salt and pepper.
  • Place the chicken in an oiled griller and cover it in medium heat and baste the meat frequently with the marinade sauce.

2. Grilled Brats with Sriracha Mayo

Ingredients:

  • 1/2 cup mayonnaise
  • 1/3 cup minced roasted sweet red peppers
  • 3 tbsps. Sriracha chili sauce.
  • 1 tsp. Hot pepper sauce
  • 4 fully cooked bratwurst links
  •  4 brat buns or hot dog buns [split]
  • 1/2 cup dill pickle relish
  • 1/2 cup finely chopped red onion

Directions:

  • Mix all ingredients, excluding relish and onions, to make a mayonnaise mixture.
  • Grill bratwursts until browned
  • Serve in buns with mayo mix along with relish and onions

3. Chocolate Scotcheroos

Ingredients:

  •  1 cup sugar
  • 1 cup corn syrup
  • 1 cup peanut butter
  • 6 cups crisp rice cereal
  • 3/4 cup butterscotch chips
  • 3/4 cup chocolate chips

Directions:

  • Cook and stir sugar & corn syrup in a saucepan.
  • Once dissolved, stir it with peanut butter.
  • Remove from heat and add cereal and mix well.
  • Melt chips and stir until smooth
  • Press the cereal mixture into a tray and spread the melted over.
  • Cover and refrigerate.

4. Buttery Horseradish Corn Cob

Ingredients:

  • 3/4 cup butter (softened)
  • 1/4 cup shredded pepper jack cheese
  • 1/4 cup horseradish
  • 1 tbsp. Dried parsley flakes
  • 3 tsp. Salt
  • 2 tsp. vinegar
  • 1/2 tsp pepper
  • 1/4 tsp. dried thyme
  • 12 medium sweet corn

Directions:

  • Mixed all the ingredients except the corn.
  • Once mixed, spread it over the corn.
  • Wrap it with foil.
  • Grill corn with medium heat and frequently turn until slightly brown.

5. Shrimp Pasta Salad

Ingredients:

  •  8 oz small pasta shells 
  • 1 lb shrimp (cooked)
  • 1 cup frozen peas (thawed)
  • 4 green onions (chopped)
  • 1/4 cup minced parsley
  • 1 cup mayonnaise
  • 1 cup plain yogurt
  • 1/4 cup lemon juice
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Directions:

  • Cook pasta according to the package instruction.
  • Combine all the ingredients together with pasta and mix well.
  • Cover and refrigerate.
